I figured out how to cook a ribeye steak at home so it comes out PERFECT without even firing up the grill, which is great if you’re cooking for one – or just want a quick & simple delicious meal. 🥩🥦👌

This is one of my favorite low carb meals ☝️ a 12oz delmonico ribeye with a generous serving of roasted vegetables from a local Greek/Italian restaurant in my town.
I’ve been enjoying that meal for years, and it’s consistently fabulous whether I dine in or get it to go. It easily makes two full meals for me. 😉 That’s a lot of good food!
I wanted to learn how to make a ribeye just as good at home…
A search brought up a lot of different methods, so I reached out to our community and asked – and got some great ideas to try! 🙂 This was back in May of 2020, here’s what posted:

I just happened to have some bacon drippings on hand, so I took a screenshot of her very detailed “reverse seared steak” instructions ^ and tried it out on my thick one pound ribeye. 🙏

My very first at-home PERFECT ribeye. 🥩😍
I used the reverse seared method suggested: room temp, salt, bake at 200° for 30 minutes – then fried it in smoking hot bacon grease for 1-2 minutes per side. 💯
It was closer to medium well (I did the full 2 min per side) but still SO tender and absolutely delicious!! 🥰 THANK YOU for all the great responses & detailed directions. ♥️
It was at least a full inch thick, and a full pound of pure deliciousness!!
I ate about 2/3 of it. I was pretty impressed – and really proud of this one. 🙂
A ribeye is still one of my favorite low carb restaurant meals, tied only with grilled or blackened salmon, but I’m thrilled to be able to make one myself at home now – that is so quick & easy, and turns out just as great!
My top favorite keto friendly restaurant sides are “loaded broccoli” or roasted broccoli & cauliflower, or sometimes a side salad. But to be honest I could just enjoy a ribeye by itself as a meal, and have done that plenty of times! 😋
This ribeye was at O’Charley’s – maybe 10 years ago? – with loaded broccoli:
Ask for your broccoli loaded, like a potato: butter, cheese, sour cream & bacon. 😉
Often, at a restaurant, I’ll just enjoy the steak and take most of the sides in a take-out box to enjoy at home with another meal. I’d need a pretty good appetite to eat the amount of food they put on your plate at most places!
Speaking of, last year I wasn’t well and didn’t have much appetite at all, but I was craving a ribeye and got one at Applebee’s with double broccoli as the two sides. I knew I’d be bringing most of the meal home after enjoying what I could while hanging out with my daughter, so I ordered it medium rare – so it would still be great with a quick pan-seared reheat later. 😉
Their ribeye is actually pretty good, but the ribeye at Chili’s is even better. I was impressed with that one, all 3 times! (lol) 😉 I think this first video was taken in Long Beach, CA but it was just as good here at my Chili’s in Tennessee too:
That delmonico ribeye at my local Gondola Pizza & Steakhouse remains my TOP favorite though!
They also have that Philadelphia Chicken you see me get often. It’s in the background here, my date ordered it: grilled chicken smothered in mozzarella and sauteed onions & mushrooms with roasted veggies. Plus we shared a plate of raw vegetables from the salad bar. ❤ Delicious!
🥩🥦 Tip: when you go out to eat, order super simple: meat & greens is always a good pick. 👍 Check the menu, ingredients & nutrition facts online before you go, and decide what you’re going to order in advance. That makes it a lot easier to just enjoy your meal & company once you get there. 😉
I’m so glad I reached out and asked, and tried the reverse sear method. Now I can make the perfect ribeye at home anytime I want!
And sometimes… that’s all I want – a simple, delicious ribeye.
